I used a recipe last night from the Kraft Food and Family magazine for a meatloaf and it was super easy and really good so I thought I'd share it.
Easy Pleasing Meatloaf - makes 8 servings (Total time needed: 1 hour, 10 minutes)
Ingrediets:
-1 pounds ground beef (I just realized that it calls for 2 pounds of ground beef but I only used 1 pound and it turned out fine)
-1 pkg. (6oz.) Stove Top Stuffing Mix for Chicken
-1 cup water
-2 eggs, beaten
1/2 cup BBQ sauce, divided
Heat oven to 375 degrees. Mix all ingredients except 1/4 cup of bbq sauce. Shape meat mixture into oval loaf in 13 x 9 baking dish (I used a loaf pan instead); top with remaining bbq sauce.
Bake 1 hour or until done.

BBQ Mini Meatloafs
Ingredients:
-1 pound ground beef
-1 pkg. (6oz.) Stove Top Stuffing Mix
-1 cup water
-1 tsp. garlic powder
-BBQ Sauce
-Shredded Cheddar Cheese
Mix beef, stuffing, water, & garlic powder until well blended. Spray a 12 cup muffin pan with cooking spray. Fill evenly into muffin pan. Make an indentation in ceter of each with back of a spoon (I just use my thumb).
Pour bbq sauce into each indentation.
Recipe says to cook at 375 degrees for 30 minutes but I cook them at 450 degrees for 18 minutes - this way they get nice and crispy which I really like! So you could do either way.
Top each mini meatloaf with cheddar cheese - you can put back in oven to melt if needed for a minute.
Here are some other options of for differet types of mini meatloafs besides bbq.
Italian - 2 tsp. chili powder(instead of garlic powder); Thick & Chuncky salsa(instead of BBQ sauce) & shredded mozzarella cheese (instead of cheddar)
Fiesta - 1 tsp. Italian seasoning (instead of garlic powder); spaghetti sauce (instead of BBQ sauce) & shredded mexican style cheese(instead of cheddar)
Mediterranean - 1 tsp. dried oregano(instead of garlic powder); 3/4 cup roasted red peppers(instead of BBQ sauce) & crumbled feta cheese(instead of cheddar)
